61- Chicken Cacciatore

Now I'm not one that is known as a good cook... unless you consider BBQ fancy cooking. But I found a very good recipe for Chicken Cacciatore in a crock pot that turned out pretty damn good. Here it is:

1- 16 oz jar Marinara sauce

1- yellow onion (cut in half and sliced into 1/2 moons)

1-5 garlic cloves (minced)

1- green pepper (seeded and cut into1 inch chunks)

4- boneless chicken breasts (or 4 boneless thighs+ 4 drumsticks- skin removed)

6- ounces fresh mushrooms (quartered)

4- bay leaves

ground black pepper to your taste

Recipe:

1- layer half the sauce, and all of the onion, garlic, peppers, and chicken in the crock pot.

2- Sprinkle the mushrooms over the top and then cover with the remaining sauce.

3- Cover and cook on HIGH for 3 hours or LOW for 6-7 hours.

4- When ready to eat:

a. remove chicken, place on warm plate

b. to thicken sauce use a cornstarch + water mix

c. served over cooked rice or noodles
